Hunter and
wild-game expert Sam Goolsby created this collection of recipes to quell
readers' fears of cooking what they hunt. Despite popular apprehension about the
flavor and texture of game such as venison, rabbit, and armadillo, to name a
few, he insists that virtually any meat can be properly prepared, cooked,
served, and enjoyed.
Mr. Goolsby
is president of Cedar Creek Hunting Lodge. Located in the Piedmont area of
Georgia, it is one of the most successful hunting lodges in the South. He
thoroughly enjoys hunting for its restful and exhilarating properties, and he
finds preparing and cooking the food to be equally relaxing. Mr. Goolsby hopes
that by sharing his techniques, an increasing number of people will come to
share his enjoyment of game preparation.
